Baked chicken wings


4 lbs chicken wings

2 tbsp baking powder

1/2 tsp salt and pepper

1/2 C gluten free flour

2 tsp chili powder

1 tsp garlic powder

In a bowl mix and coat the chicken wings.  Place them on a rack on a cookie sheet (use foil on the cookie sheet and spray the rack).  Bake at 400 degrees for 45 minutes, turn the wings over and bake an additional 35 minutes.  

Hot Chocolate (gluten and dairy free)


1/2 cup cocoa powder

3/4 cup coconut milk powder

1 c coconut sugar.  

Mix all together.  I sifted mine.



I was at a work function and I met a nice lady who gave me this recipe.  This one is good!

1 Avocado-mashed

1/2 plum tomato-remove seeds/pulp

and cut up the rest

1/4 onion-cut small

1/2 jalapeno-cut small (seeds make it hot)


lime juice and salt to taste

Healthy Peanut Butter


1 pound lightly salted peanuts(shelled)

2 tbsp honey

4 tbsp pure maple syrup

1 tbsp coconut oil, melted

1 tsp vanilla extract

Preheat oven to 350 degrees.  Place parchment paper on baking sheet.  In a large bowl whisk maple syrup, honey, vanilla and coconut oil.  Add peanuts and mix all together.  Pour peanuts on the parchment paper and spread them out.  Bake for 10 minutes.  Allow to cool for 15 minutes.  Pour into food processor or blender.  Blend on high for 5 minutes, until creamy.

Bread cumbs


I don't eat the end crusts from my loaf of bread so I put them in a container/bag in the freezer and use them to make the italian bread crumbs.

5 slices of bread

 1 tsp parley, basil

1/2 tsp garlic powder, onion powder, oregano

Put the bread in a food processor or blender on high until bread is in small pieces.  Add the spices and blend for 1 more minute.  Use non stick cookie sheet and add bread crumbs.  Bake at 350 for 10-12 minutes, until golden brown.  Break them apart.  Let cool for 30 minutes. I put mine in a storage container/bag in the freezer.  So easy and tastes great.

Chourico and Beans


1 Chourico cut into small pieces

3 large pieces garlic, cut small

1 medium onion, chopped

1 -16 oz can kidney beans, rinsed

3/4 C rice

2 C Chicken broth(gluten free)

1 tsp Antonios hot chopped peppers

1/2 tsp salt and pepper

2 tbsp olive oil

1-8 oz can cut tomatoes

In a pot add olive oil, garlic, onion and chourico.  Cook for 3 minutes.  Add all the other ingredients.  Bring to a boil, lower heat, cover and cook for approximately 20 minutes(until most of the liquid is gone).  Enjoy!!
